A burn is one of the most common and devastating forms of trauma and wound healing is a crucial issue in the treatment of extensive burns. Effects of colored potato extract, which is excellent source of polyphenols including anthocyanins, on the burn (2 degree) wound healing were determined in rats. The wound sizes of experimental groups were rapidly reduced after burn compared to those of control groups. Light microscopically, reepithelialization and recovery of architecture in the injured skin were well accomplished in the experimental groups. Immunohistochemically, positive reaction products of PCNA, which indicates cell proliferation, were more prominent in the injured skin of the experimental groups. Briefly, colored potato extract improved the second-degree burn wound healing in animal model. The results suggest that the extract of colored potato might be expected to be an effective component for development of burn wound healing drug
